Ingredients:

1 cup brown rice
1 tablespoon peanut oil
2 tablespoons soy sauce
1/2 cup scallions, chopped
2 bell pepper, chopped
2 eggs, beaten
Sea salt and ground black pepper, to taste
1/2 teaspoon granulated garlic


Directions:

1. Heat the brown rice and 2 ½ cups of water in a saucepan over high heat. Bring
it to a boil; turn the stove down to simmer and cook for 35 minutes.
2. Grease a baking pan with nonstick cooking spray. Add the hot rice and the
other ingredients.
3. Cook at 370 degrees F for 15 minutes, checking occasionally to ensure even
cooking. Enjoy!
